Since this is a lunch time post, I’m going to share some lunch time food. I made another version of lentil soup in the crock pot. This one was less hearty without the wheat berries & a little creamy with the addition of coconut milk.
Coconut Curry Lentil Soup
-2 cups red lentils
-2 stalks of celery
-2 tablespoons curry powder
– tablespoon garlic powder
-1 teaspoon curry paste
-1 can coconut milk
-pinch of red chili flakes
Put all ingredients except coconut milk in crock pot on low for 8 hours. Add coconut milk in last hour of cooking. Blend and enjoy!
I like a strong curry flavor and this soup is a little mild. Next time I will add more curry paste as the powder just didn’t do it for me!
Masala has been on the brain lately.. Maybe chicken tikka masala.. or channa masala… maybe some homemade naan!

Don’t forget the bread! Speaking of bread I fed my starter on Wednesday and need a new bread to make! Thinking ciabatta.. Any ideas?!
