Exciting News & Mango Lime ‘Larabars’

We have very exciting news!

We have booked our flights to New Zealand for 2 weeks in September & we have tickets for two matches of the Rugby World Cup!

The rest of the trip is yet to be planned.  We now need to do some research as for what we want to do, pay off those plane tickets & start saving some $$!

Any suggestions?!

Remember my Apricot Coconut Tropical ‘Larabars’ ?  I’ve been playing with the idea of Mango Lime.  I’m trying to recreate the mango cups you get at farmer’s markets where they give you long sticks of mango with lime juice & sometimes some sort of chili powder sprinkled on top.  Does anyone know what I’m talking about?  Anyways, I thought chili in a larabar might be kind of weird so I went with Mango Lime.  I used dried mango from trader joes but next time I will try drying my own.  It might allow a stronger mango flavor to come out if I leave a little juice in them.  Here’s what I came up with, I love the lime flavor that comes through!

Mango Lime ‘Larabars’

  • 1/2 cup processed dates
  • 1/2 cup processed dried mango
  • 2/3 cup finely chopped almonds
  • juice of 1 lime
  • zest of lime to taste
  • Remove pits from dates and put in food processor or Magic Bullet.  Process until pasty.  Measure processed dates to get 1/2 cup.  Repeat process with dried mangos.  Repeat process with almonds but measure 2/3 cup of finely chopped almonds.

    Mix all ingredients together in food processor or combine with hands in bowl.  Get your hands dirty to incorporate all the ingredients.

    Spread mixture onto wax paper and cover with another piece of wax paper.  Roll to desired thickness and shape.  Put in refrigerator to get hard.

  1. Wow, Tammy! These are freaking amazing!!! It was so sweet of you to bring me a couple of these to eat after the run today. Needless to say, they did not survive the drive home:) I can’t wait to buy myself a food processor or magic bullet and get to work making my own. Best of all, no baking required!
